I am have just ordered my AMD 2500, and want to OC it. What memory do I need to get? Can I get by with PC2700 memory, or do I need PC3200?

I'm assuming your 2500 is a Barton. In which case, the pc2700 may poop out before your cpu forcing you to run non-synchronized timings that will hinder performance. Get the 3200 Ram to ensure that you'll at least hit 200MHz FSB.
agreed pc3500, plus 215mhz (430mhz ddr) is probably the most you will get out of the nforce2 with stock cooling solutions. Pc3200 is fine, but pc3500 would be a good solution too, pc2700 would do little to help performance because by overclocking you would not increase the memory/fsb bandwith.
