Removing RAID to a disk

I've a server with 2 disks in mirror.
Is it possible to remove the mirror from the disk array without loosing data
on the disks and so use one of the disks with no mirror on the same machine?
I hope this is clear.

The simple answer is yes. You can simply remove 1 HDD from you system and
it will continue as before.

To do the job cleanly, you should have some RAID software to assist in
cleanly breaking the mirror.

As you mentioned, you must use some sort of software. If you're using
RAID 0 you will effectively destory all data (or most of it)...
