Can anybody explain the differences between typical server and desktop CPU's when used in a single-processor configuration?

Intel sells Xeon and P4. Today both processors support hyper threading, so what is the difference?

AMD markets Opteron and FX51 - both support dual channel memory configurations, so what is the difference?

Server CPUs have move severe testing requirements after manufacture to ensure stability.
