How to hang overhead mics for choirs

You really should not...the mics reject audio when they are positioned off axis.
the mics should face directly at the choir, the height should be mouth level.
If you are using several mics for a whole bunch of people, they can be backed up 3-6 feet in front of the singers.
You will need a professional equalizer installed to tune out the feedback, preferably 31 band, 1/3 octave. Otherwise you will usually get too much ringing from the speakers with so many microphones.
Don't expect miracles from that type of setup. A better way is to have a mic for every three singers, and to sing closer to the microphones.
If the mics have to be raised, use boom stands, not hanging overhead.
