Minecraft is abysmally programmed so it's anyone's guess what frames you'll get. It's graphics are so poor you should be hitting 150 fps without a sweat, but that won't be the case.

The frame-rates in minecraft can vary horrendously, but except that in the most demanding scenarios that you would normally come across, such as a nice view into a giant ravine to hit a minimum of 45FPS.

In other situations expect about 70-120fps to be common. Your gaming experience will be more than adequate with that setup.

You will probably get a pretty high framerate most of the time but it will randomly drop to very low framerates for no apparent reason, it happens to everyone and it's just the way the game is...

Google is your friend. I wouldn't recommend it until you know a lot more about it.

You'll definitely get over 80 FPS, easy. The i5 alone with Intel HD Graphics and sometimes get that much. Just install Optifine and pretty much any hardware can perform well with Minecraft. Since you have a dedicated GPU, you shouldn't have any problems. In response to Skyrim, I bet you could play on Minimum settings. You might be able to play on Medium, but I don't have much experience with that particular GPU. I can play most modern games at 40 or so FPS on Low and 30 on Medium (Skyrim, etc.) with a 7350 an AMD FX. In Minecraft I get about 100 FPS on normal settings and 50-60 FPS stable at max settings on a 1080p monitor. You should be fine! :)
