Would a 800 P3 133FSB CPU be roughly equivalent to a 1Gig P3 with a FSB of 100?

In many applications, yes. But the 1GHz PIII with 100MHz bus (ie, PIII 1000E, not 1000EB) is a rare processor and worth tons of money to some people.

So if you have both, consider SELLING the rare processor!
