I have never killed Izchak.
Yet I have found some situations where I couldn't keep one of my big pets
from running rampant through Minetown and I lack a key or lockpick to lock
the door to the lighting shop.
Would stoning Izchak, for his own protection, be considered taboo?

What about leaving the pet behind on the next/previous level?

Well, I am no ethics specialist, but I'd say, each attack is bad.

I think shopkeepers are one of monsters that are immune to taming for
technical reasons (the shopkeeper structure), whether angry or not.

they dont tame, but they can be pacified with one (see scroll spoilers)

They're doubly immune to being made tame; once for the shk structure,
and even if that didn't give immunity, they're human, and humans are
untameable. However, *any* monster except Rodney, the nemeses, or Medusa
will be made peaceful if it fails its saving throw against the charm
effect.

Does that include the Quest Leader? My last wizard (first character to
reach the Quest) accidentally hit his Q.L., so everyone got angry at
him. He cast "charm monster" quite a few times, with no result. I
considered the game lost, and I #quit.

Inspecting the code, I can't *see* anything in tamedog() that would
prevent charm monster from making your quest leader or quest guardians
peaceful. Your quest leader is not the Wizard of Yendor, does not have
the M3_WANTSARTI strategy flag, and is not Medusa. Neferet the Green
has a saving throw of 60, so it *is* possible for charm monster to
succeed against her.
However, AFAICT, you should have been immediately (and irrevocably)
thrown out of the quest as soon as she next got an opportunity to speak
to you, even if you successfully charmed her.
