What are the strictures that monks need to follow in SlashEm? Never having
played them I don't feel like making the ghods angry with me for eating the
wrong item. Are these all hardline enforced or are some of them of a
softer, gentler law?

It's basically the same as in vanilla. No meat, but "animal products" (cheese,
royal jelly) are okay.
OTOH, it's not that bad eating meat. You only lose a single point of alignment
which can easily be rectified by killing a few hostile monsters.
Oh, and you _really_ don't want body armor.

Except robes.
Dopplegangers *really* don't want body armor but have smaller benefits, so
a DSM is usually better than nothing.
Dopplegangers monks find their robe to become useles around XL 10. Just
keep a robe of power for spellcasting if needed.
