what about for water cooling? Do they offer any extra cooling? I would think with more surface area a larger amount of heat could be dissapated.

What is the difference between <font color=red>pink</font color=red> and <font color=purple>purple</font color=purple>? The <b>GRIP</b>!

The vast majority of heat comes from the core, though. That's where the actual CPU is. The surrounding area produces far less heat. Shims mostly protect the core by spreading out the force, they don't really dissipate heat.
