I'm trying to hook my MN-500 up to my existing wired
network as a wireless access point for my laptop.

What are the steps needed to do so?

What cable needs to be used (straight, crossover), and
which port is used to hook into my existing LAN?

Information is in the User's Guide. You need to use an Ethernet cable (like
an RJ45) to wire the MN-500 to the router. It will not serve wirelessly
except to other wireless devices. There's quite a bit of information in MVP
Barb Bowman's articles on the Expert Zone, especially her segmented LAN
column:

Not what I was saying. If you want to use the MN-500 in access mode, IT
must be hard-wired to your router. If will function perfectly if you laptop
is wireless. What some folks think is they can set up the MN-500 and just
have it connected to power, thus extending their LAN range. It doesn't work
that way.
