A couple uses I can think of for dual NIC's is to share internet connection, and also to connect to 2 different data networks simultaneously. I have a system that is on another subnet and we needed to print to it because it has a special kind of printer for checks... added another nic, and attached it to our other subnet. Worked perfect.
