Can I use Walking Desecration's activated ability to force Arcbound
Stinger to attack? I don't think so, but if I'm wrong, what creature
type would I choose?

Thanks,
-Trevor.

put into a graveyard, you may put its +1/+1 counters on target

That depends: Has Arcbound Stinger been given a creature type by
something like Conspiracy or Mistform Mutant? If not, no.

Artifact Creature
An artifact creature is a combination of artifact and creature, and it's
subject to the rules for both. (See rule 212.2, "Artifacts.") Some
artifact creatures don't have a creature type. Those that do will say
"Artifact Creature -- [creature type]"; for example, "Artifact Creature
-- Golem." "Artifact" isn't a creature type.

If it was given a creature type, you would choose that type.

No, you can't; Arcbound Stinger doesn't have a creature type. It has two
permanent types, but it does not have any creature subtype (or any artifact
subtype either). Many artifact creatures have no creature type at all.
