Hi,

Does Sol Ring still produce colorless mana since it wouldn't produce
mana of any other color than white? I'm sure it does under this
wording but I thought it might be intended otherwise.

This isn't official, but I think that you're right: it produces
colorless mana. Celestial Dawn says "Spells and abilities you control
produce white mana instead of any other color.", and Sol Ring is not
trying to produce any other color, so Celestial Dawn doesn't affect
it.

Correct. "instead of any other color" only changes colored mana to white,
it doesn't change colorless mana to white ... so you can't use the Sol Ring's
mana to cast a White Knight spell, for example.
