I haven't done it. But from what I've read/heard it's cool for OLD titles (like Q3), but none of the new titles will play at reasonable frame rates. Even playing things like Q3 and Jedi you will be playing at relatively low res. to get the good FPS. Matrox's LIST of upcoming titles even includes UT2K4 and I have a feeling that will play like 5-10FPS in surround mode on the current Parhelias, especially since they play very slowly with just UT2k3.

I'm a fan of the concept, unfortunately there just isn't the power there. I'm hoping with the advent of PCI-EX cards (like the R420/RV380) that you will have more powerful setups able to handle that. Setups like 1 main card and 1 card for the 2 surround screens, or 1 card per screen. I think then you could play Morrowind in Surround, which would be awesome IMO.

Actually I was just checking for old links and I have this one from nVNews shortly after the Matrox's introduction to store shelves. There are a few good benchmark numbers. Seems to be a little better than the other impressions I've seen, and the hit of AA was very low (due to Matrox's great Fragment AA [best in biz if you ask me]).
Check the bottom of the page for links to the benchmarks for each game. In this case UT2K3 didn't do so bad.
I remembered bookmarking this page for a reason.
