How can I tell which software I'm using to send and receive email?

If you don't know then the answer is none, as Windows 7 does not come with an email client.
You can download and use Windows Live Mail for free:

If you don't already have a Hotmail account you will need to create one, otherwise log in using your Hotmail details.
Another free one is Thunderbird:
