I didn't know this could be done - I've got a 6-player boardset but no
2-monitor cabs to commit to it. Where can I find info on this
conversion?

Yeah that was me. :-) I talked to the guy and it's only a 2 player. I
think he stuck a 6 playr PCB in a 2 player cab, only hooking up 2 sets
of controls so 4 of the 6 players are just never used.
