I'm having problems pushing my card even a little bit. It was fine with my old CPU (Athlon xp 2600) but with my current (Athlon 64fx-53) it isn't very stable at even just 5% over. I'm assuming it's because the old CPU could not push the card anyway but I should be able to run it from stock 520/560 to 555/600 from what I read. I was trying to run it at 540/580.
Honestly I'm a total newbie on PC configuration. I was just wondering why I could do it before but not now. Also because I should be able to push it that far anyway. I just got all this stuff together last night so I'm trying to figure it all out.

I know with the 6800GTs/Ultras that the powersupply can cause some unstability when trying to draw even more power. The new CPU/MB may be drawing more power. I didn't see your PSU listed, what do you have? Another thing is heat--how is the temp in your new setup compared to your previous setup?
There are a few guys with X800's here so maybe they can help.
Also, this: " All my components are generally viewed as being relatively easy on the power supply." is one of the stupidest things I've heard in a long time. I'll leave it to you to figure out what that means.
