It may take longer (at least to get it right), but just plopping some cut-up potatoes, carrots, and beef into a big pot of beef broth kicks arse! Maybe add some peas, corn, and/or noodles too. If you're really daring, add some spices and herbs. Then let it cook covered on a low-ish (just barely boiling) heat for two hours (while you play a game or watch a movie or whatever), only occasionally stirring. Now THAT'S soup.
And if you add some instant potatoes into the broth as well you get thick and hearty stew instead.
Put the left-overs into tupperware (or zip lock bags or whatever) and reheat for an even better meal. (Because the flavors really blend when you leave it sit for a day or more.)
Screw canned soup!
