What's the difference? I've had people tell it's better to install them in normal, but they never told me why.

Normal will set AGP to 1X. Turbo will allow you to use AGP 2X or 4X. You can select AGP 4X in the BIOS but it will only work if you install Turbo mode AGP.

Some motherboards (mostly older ones) are stable only at 1X.

More recent boards work best at 2X but many of these are fine at 4x. 2X is usually a good choice for better stability and you won't notice any performance loss vs AGP 4X. Again, you need to install AGP driver in Turbo mode to get anything higher than 1X.
