I tried to copy a specific profile to default on Windows 7 using the same procedure as on XP. But il will only let me copy the 'default' onto other profiles. Is it possible to bypass this problem ?

I believe that Windows 7 (and Vista) use a profile section called Public. Try moving items there instead and see if it works for you.
