I'm going to be putting a system together, right now I'm looking at this:

ABIT KR7A RAID
AMD XP 1900+ (or 2000)
512MB DDR 2700 Corsair CAS2/Heatsink
Gainward TI200 (or Leadtek Winfast Ti 200T)
WD 7200RPM 120GB w/8MB cache

My other mobo choice is SOYO SY-K7V Dragon+. Are both
motherboards fairly equal stability wise? Would the memory
present a problem with either motherboard?

Either board will work fine for you. I have the Dragon+ and love it, and also have an ABIT KT7-RAID. ABIT has kicked butt for a number of years. Soyo is a pretty damn good up and comer. The KT266A chipset seems to be a winner.

I also just build a box using the Dragon Ultra with the PC2700 from oversclockerzstore - it rocked my world. Go for it.

It's always the one thing you never suspected.

All mobo equipped with the 266A chipset have similar performance. And all are stable.

I love my Abit board, but Soyo also make good boards.
Why do you want PC2700 mem, are you planning to OC or you want to use it on future 166(333) MHz boards?

My case has so many fans that it hovers above the ground  .

I don't plan on going overboard with overclocking (at least not yet :). I'm thinking about the future a little too with the KT333's. Of course 6 months from now, I'll probably be drooling over something new.

Anyone with a Soyo have any problems using a sound card like the M-Audio Delta 66?
