In terms of memory speed, you won't be able to tell the difference between 2x8GB and 4x4GB that is clocked/timed identical to each other.

But, for overclocking RAM to achieve faster speeds, having 2 sticks and 4 sticks will make a difference in terms of stress on memory controller, stability and other factors.

In short, go for the 2x8GB since the price difference isn't really big these days between the two. You can also easily go 32GB if you want in the future without having to change out anything.
