This is my PSU and I am wondering what is the most powerful GFX card I can use with this, I am a complete idiot when it comes to stuff like this.

I would say a 7750 from amd for it, that psu only has 228W on its +12v rail(the cpu will also be feed in it) and the total of 335W max.

Any Dx11 capable Geforce cards I can put in? And how do I know what cards I can fit and which I cant?

I think the 650 gtx might do, it depends on what cpu that you have, the maximum tdp of the 650 gtx is 64W.
If you want a better card, i recommend getting a new psu as well, one within 500W, from brands like corsair, antec, xfx, seasonic, fsp, superflower, pc power and cooling.

Could you please explain how does one judge what gfx cards a PSU can use? Thank you :)

Look for the maximum tdp of the card(s) or look here : http://tpucdn.com/reviews/EVGA/GTX_650_Ti_SSC/images/po...
Or look for reviews of the card(s) in question and look for the power consumption of it : http://www.techpowerup.com/reviews/
Also a good site for checking the requirements : http://www.realhardtechx.com/index_archivos/Page362.htm
Don't forget to add the cpu in equation and other minor stuff like the motherboard consuption, fans, hdds, etc.
In the label of your psu it has 228W on the +12v rail and the total of 335W, the rest is doing some math.
