Video Encoding Machine

Hello everyone,
I want to build a small computer, which will live its live encoding videos.
I don't need a monitor for her, as all the work she will do will be via network.
(for initial OS installation I will use a monitor/kb/mouse I have... yet after that, all changes will be via SSH)

I'm inclining towards something quad-core, as I'd like it to encode those videos fast.
The videos last 60 seconds each, and are done once every 10 minutes.
The encoding is done via ffmpeg, and the end result will be h264.

Approximate Purchase Date: 1-2 weeks
Budget Range: 200-400$ (bypass S&H)
System Usage: video encoding with ffmpeg via linux
No monitor, no keyboard/mouse.
Preferred website is: Newegg.com and TigerDirect.com

I already spec'd one over in NewEgg.com, yet I'm sure you have more experience and can get me a better setup than what I came up with.

Hard disk space is not needed for much, as the videos will be uploaded to a server via ftp once done.
So I'm guessing 32GB is more than enough for her (maybe an SSD?)

As to RAM... I thought 2GB, yet with RAM being so cheap, 4GB?
No preference between AMD and Intel.

Finally, if there is somehow, some possibility to have this system not use a fan, it would be perfect.
Reason being: The environment where she will live is dusty and generally crappy.
So if I can get away with having it sealed inside a box, that would be perfect.
(power supply I can have outside the box... no problem changing that every so often).

Any thoughts?
