Schools Windows Server 2008 R2 Very slow

Let me preface this by saying that I am not all too knowledgeable in the field of Microsoft Network Admin and the such. My schools voc ed center offers a few tech classes that all have their own server that they run. I am enrolled in PC Servicing but I have been tasked with fixing this issue because nobody else knows how. The server is used to network boot about 60 machines or so. These machines use roaming profiles and thats about all I know as far as technical details. The problem is that the machines are all super slow and nobody knows why. We recently stumbled through creating a new boot image and all that fun stuff with WDS and it didnt help at all. It is running Windows Server 2008 R2 as mentioned in the title. It has 2 Intel Xeons@2.27GHz and 20GB of RAM. Thanks for your time, any suggestions or help would be greatly appreciated.

Network booting 60 machines, PXE booting you mean? If that's the case, yes, it will be slow.

Can you describe in more detail the environment setup?

Not just the PXE booting, but the roaming profiles that have to come down the pipe on every boot. The bigger the profile (files/folders on desktop, My documents/pictures/videos, etc.) the longer it will take to log in/out, or, for that matter, do anything.
