Would like to know if anyone knows if this would make a good screen recording and video encoding rig with emphasis on "good".

I only play flash based games at the moment .. but that could change with the GPU.
Also, if I get a cheaper motherboard I will have to buy memory which could possibly result in more money spent. And I'm at my spending limit already with the current build.
Unless of course 8 GB @ 1333mhz CL7 would be good enough. I have that in my current PC and 3GB in drawer that I could put back in it's place.
 
Why will you have to change memory if you change the motherboard?

If you don't have a need for a better GPU, I say you build looks fine just the way it is.

Single channel RAM isn't ideal as dual channel is faster, but it will work and only be around 3-5% slower. Nothing noticeable.

The RAM comes free with the current motherboard. So, if I go with a different motherboard I will have to buy RAM or use my current ram.

I chose the HD 7770 since I think it will do all I need and then some. Was originally going to get HD7750 but the HD 7770 is almost the same price at the moment and slightly outperforms the HD 7750.

I should probably mention that my current RAM is 8GB(2x4GB) CL7 @ 1333Mhz Crucial Ballistix

And from my understanding of CL and Mhz that I gained from this forum.

My Crucial RAM would probably outperform the G.Skill CL 10 @ 1600mhz.
Since I plan to run every thing stock clock.
Correct me if I'm wrong.

If it comes down to buying RAM though I will go with atleast CL9 @ 1866 mhz that should be pretty zippy.
