can ethernet be on a cable if it isn't on your motherboard?

That's pretty much the way it's done in the server world. You have a few onboard, and a bunch of add ons... You can add on a card, or USB dongle although unless you have usb 3 you won't be able to get gigabit speed.

Assuming you have a desktop computer and not a laptop, you need to get a network interface card.
