I would get a 7950 or 7970. Asus preferably because of the direct cu II cooler.
If you sli a gpu i would sli the 650 ti BOOST because it is a good graphics card to sli for 300$. Get 8GB of 1866 RAM. G.skill sniper series on newegg is 66$. Unless you sli you only really need a 650 watt psu. 600 watts if you sli the 650 ti BOOST. Unless you are storing hundreds of movies and stuff you dont need a 2 TB hard drive. 1.5 or 1 is good enough. If you have a budget of 1200$ or 1100 £ go with a intel 3570k. with the MAXIMUS V asus mobo.

Yeah go with one fast card over two cheap cards. This way you're not killing ur upgrade path. With one strong card u have the option to sli or crossfire down the road when games start running poorly, or not to satification. With two cheap cards, you're dead in the water down the road.

Not sure of the prices where you are, but a 3gb 660ti or a 7950/7970 is what I would grab. Then sli/crossfire it when the become somewhat cheap.
