It all looks compatible, and will work together, even if some parts are probably overkill.

As for the OS, 98% of games are Windows only, so for a "high end gaming system" Windows 7 or 8 are really the only options.

Lol apparently you do not know anything about linux... all games are compatible with linux with a little bit of work. Windows 7 is preferred but you can do what you want.

You do not need a massive tower case, though that is personal preference there.

Expensive/not cost efficient monitor

680 is way to much for games, a 670 or 7970 will save you $100 and (with the 670 lose 5%) or (with the 7970 gain 5%), and you will be able to max out every game still without a problem.

Sound cards are pointless, don't get one

16GB of RAM will never be used, get a 2x4 1600mhz kit

Maximus V is a complete waste if you do not use every slot, get a Asus V LK instead.

i7 will never fully be used, an i5 3570k would do just fine.

Do you have any tips and the reason I want top notch parts is because I wanna future proof it.

You cannot future proof a PC, you are going completely overkill in the first place, you really should just go down, and you will still have the same performance from now until later anyways, this should save you $500+ and you still will get better longevity of the system.

Not just that, you should follow the other parts that you should down/upgrade, you will be saving yourself a lot but gaining a lot in terms of value/performance per dollar.
