If you are going to SLI, more power is a safer option for the future, so option 3.

Seasonic 860 platinum.

Same price on newegg as that seasonic gold series, and may save you some pocket change over a couple years by being more efficient.

Update:
Review of the 850 Gold X-series seasonic
http://www.hardocp.com/article/2013/04/04/seasonic_xser...

Efficiencies of the gold vs. platnium seasonic are almost identical at full load, however the platinum is more efficient at a load of 20%, or likely what you may see in normal light use such at internet browsing. The difference saves 10W with the platinum over the gold in this usage.

If we assume you have electricity costing $0.15/kwh, and you use the computer in this mode for 2 hours a day, you would save about a dollar a year on electricity with the platinum over the gold.

xD guys change of plans!

going for the BIG ones this time xD

its either

Corsair HX1050W Silver VS SeaSonic 1050W Gold X-Series

Honestly, both of those will be excellent power supplies, if you need that much juice. There doesn't seem to be enough difference efficiency-wise to shake a fig at, and the corsair is 20$ cheaper on newegg, so go for it. I currently use a HX750W from Corsair and am happy with it.
