I've noticed that the new silverstone cases have the option of mounting more than one powersupply. Why would someone install 2 power supplies in their rig?
I'm pretty sure you can power everything from one powersupply

Some cases can support multiple systems, that would be one reason.

Another would be that some people have absolutely beastly systems, and I'm not even talking quad Titans or something like that. Some Folding@Home rigs that are geared heavily toward GPU compute performance will be using server class HPTX dual CPU motherboards, with the capability of filling every PCI-E slot with graphics cards.
For that kind of rig, you would need dual PSU's to power it all.

some high end computers require that much juice. for example, a evga sr2 1366 based system tends to draw more than 1500w at full load. or if some boards have 2 24 pin connectors on them, you will need 2 psus
