Will 2 GB Handle two monitors?

No it is not a bottleneck.
BTW how do you like that monitor? i am looking into it for dual screen. ( no nvidia surround or eyefinity )

Should be just fine. I use a 1 gig 6870 for 2 monitors. One at 2560x1440 and the other at 1920x1200. I game on the big one, and have the second open for browsing etc.
