Sapphire 7970 3GB Vapor-x multi monitor performance

How does this specific card hold up when it comes to gaming across three monitors?
I've also seen that this card can be overclocked to 1185MHz. Would this increase in core clock have a positive effect on how this card handles a resolution of 5760 x 1080?

At any reasonable graphics settings don't expect a great frame-rate ~40FPS in BF3 for example. Yes an overclock will help increase your FPS but not enough to make a hugely significant difference. If your running eyefinity consider a crossfiring two if you have the resources to afford such a setup.

That shows a vanilla 7970 running 30-40 fps at 5760x1080 with all the graphics settings at the highest levels. If you had to guess, what would fps look like if the 7970 were oc'd to nearly 1.2Ghz and the graphics dumbed down to low or medium?

That is very much game and setup specific and I don't like to guess. Obviously the lower the settings the better FPS you will get. Overclocking will help again. The 6GB version of the vapor-x again should increase FPS but only very minimally: http://www.tomshardware.com/reviews/toxic-hd-7970-eyefinity-6gb,3264-9.html. But the results would be too setup oriented to comment on exact numbers.
