I know the i7 and 32GB RAM is overkill for gaming but I thought it would be helpful for VMWare Workstation. Does all this match pretty well?

Do you really need an optical drive? It could save you some money if you didn't get one. Also I think that buying a small SSD for the os and buying a cheap large HDD would be better. If there are going to be 5 guest machines running than you should have a lot of space. Other than that looks pretty good.
