I am building myself a new gaming PC, and my budget has led me to the following dilemma:

GTX 760 + i5 4670K + Asus Z87 Gryphon/Asrock Z87 Extreme4
or

GTX770 + i5 4570 + Gigabyte Z87-HD3

I would use this with a 1920x1080 display. What should I sacrifice now, the motherboard+CPU or the GPU, what would make the bigger difference now and in the future.

The GTX770 will give a little over 20% framerate gain on average. The overclock will obviously depend on how far you push it (you're getting a decent cooler for that option right?), but very few current games will see much benefit unless they're heavily CPU-bound games.

Also are you using an SSD? If not, I'd say take the 4570 and GTX760 and use the money saved for a SSD to run Windows and your games from.

Go with GTX770 + i5 4570 + Gigabyte Z87-HD3

Games depends on gpu and 4570 is enough it will not bottleneck any gpu

My other option is to go with the cheaper Asus B85-PLUS, 4670k and the GTX770, but I do not know about that motherboard...
I will be putting a SSD with my next paycheck.

Good man. Which SSD will you go for? And you want a Z87 chipset mobo if you plan on overclocking that CPU.

Depends on how long you want the system, how long till next upgrade. If you want it for a few years then go with the 4670K and a Z87 motherboard (Z87-M PLUS lacks some power phases so check up on that if you want better-gryphon is good) if you want the performance now, go with either B85/h87 with a 770. SSD's are great if you can fit one in somehow
