What do you think about this system setup?

I'm putting together a gaming computer and I've spent literally tens of hours in the last 2 or 3 weeks trying to find the perfect combo. Where it got me is:

PSU: Corsair AX1200
Memory: Corsair Vengeance 16GB (2x8) 1600MHz
MB: Asus Maximus 6 Hero (DDR3 1600MHZ)
CPU: Intel I7-4770K (planning on overclocking to 4,2-4,5 GHz)
GPU: Gigabyte GTX 760 (2-way SLI)
Storage: 1x Seagate Barracuda 1TB, 1x Samsung 840 series 120GB SSD
Case: Corsair Obsidian 550D
Screen: BenQ xl2720t (with the possibility of getting 2 more in the future)
OS: Windows 8

I have a few questions about this setup:

1. Am I going overboard with the 1200W PSU? I want to have the option to get better 2-way or even 3-way sli's in the future as well as overclocking the CPU.
AX850 has been recommended to me but seeing that the AX1200 is ''only'' around 60$ more I figured it would be a better bang for the buck. One downside I've seen though, is that I wouldn't be able to fit a fan on the bottom of the case, which in turn leads us to question #2:

2. Having a silent system is a big plus for me so from what I've read, swapping the 3 fans that come with the case for 3 NF-S12A is ideal. Would you agree on that and where and how should i station them for the most beneficial heat elimination.
Also, if you recommend some compatible or better fans with led-light, that would super cool :)

3. For heat sink I've been thinking NH-D14 over the H100i, mostly because from what I've read the NH-D14 is somewhat more silent. But it's so freakin' huge, would my corsair memory fit? Would you recommend another heat sink for the CPU? Also I've seen that if i put a NH-D14 in my system I wont be able to fit a side fan or a roof fan..

As i said, this setup will almost entirely be used for gaming, so if you have any ideas for a better setup without me having to add more than 1-200$ feel free to tip me :)

2000-2200$ excluding the monitor. I plan to build a rig that will keep me going on max settings for the next years, so you would recommend dropping the i7 for i5 in that case? Would you recommend any specific cpu? Also, what motherboard would you recommend?

Thanks :) So you would reccomend getting a shorter PSU and having a bottom fan?
I think i'm going for the Noctua NH-U12S. Thanks for the tip :)

Thanks so much g-unit, that helped a lot :) I think I'll go with the Noctua NH-U12S though, as I've read too many horror stories of leaking water coolers :)
I've decided to go with the i5, but just for curiosity's sake, will i feel any difference in gaming between 8 and 16 gb ram of memory when i'm gaming?
Awesome idea also to go a bit cheaper (but still good) with the MB and CPU and get gtx 770 instead :)
Regarding the windows, why do you reccomend 7 instead of 8 (also, I can get 8 10$ cheaper on amazon, that's part of why I'm asking :) )
Also, with the gtx770, if I add 50$ more on each card, I can get them in 4gb versions. Is that something you would recommend?

I decided to go with the asus motherboard after reading reviews, and seeing that it's higher rated and doesn't vary that much in prices imo.
I'm still thinking about that psu. For this setup, what would you recommend? Will I get away with a 850W psu without risking power shortage or something worse?
