They don't just sell ink in bottles, it's in cartridges which are different shapes and won't fit in the printer. I've never seen a bulk ink bottle sold by a printer maker.

If you are talking about 3rd party ink, those are not made by the printer vendors. I would think that the color mix and thickness would vary from brand to brand. It may work fine, it may clog or spray funny or colors could be off.
