System Specs:
I7-3770k OC 4.2
H100i cooler
4 120 mm system fans
2 120 mm hd fans
1 Vector 256 gb Sata 6
3 x 3TB Sata Green drives 7200 rpm
16GB of DDR3

PSU is ST75F

so 750 watts max
Quad Rails each rated for 18A

Currently using onboard GPU for video and I am in the middle of securing a 3rd 24 monitor. Right now just have 2 24 inch Syncmaster a third is on the way via UPS.

Was going to start with one 7850 and then add a second assuming my PSU will support it. PSU has 4 6 pin connectors

The solution is throw a card that is nearly twice as much money is the answer?

Doesn't seem very practical cost wise.....

Or get an HD 7950. Point is do not go for dual AMD cards.

Get one HD 7950 you should and you should be fine on ultra with 40+fps on high :). Dual GPUs are for games such as crysis 3, arma 3, heavy video editing, etc.

You should get either of these:
