Would 2 2G gtx680 SLI be enough to play games at 1440 on a 1440 monitor (with a high fps) or will I need to upgrade?

And how high fps can I expect to see at games like metro, crysis, bf etc at Max settings?

If you can give AMD a little time, their R9 290X should be able to play most current games (aside from crysis and metro) at ultra settings. I HIGHLY advise against SLI or Crossfire as many games do not support them and the heat and power consumption is unbearable. Anyway, if you turn to GPU14 hosted by AMD, you will see that at 5760x1080p (triple 1080p), Battlefield 4 ran AMAZINGLY on a single GPU. I would wait for benchmarks, but it is your call!
