Need advice on my 2 stage Intel budget build

I'm trying to map out a gaming rig for Final Fantasy XIV A Realm Reborn exclusively and I will be buying parts for it over time. I have an ideal setup in mind with atleast a starting point on the components which I think may need some adjustments.

Since I am working on this build over time I planned it in 2 stages. With the first stage I'm going cheap and using a 32" 1080 TV i've used with my laptop and it works perfectly fine. I will also buy a cheap secondary monitor probably through craigslist or ebay.

All of the following components will be bought for the first stage and it comes out to about $750 in total. All prices and links are from newegg , though i will search around for the best deal when buying. Probably getting the GPU asap (on sale) as long as its clear for the build.

Fans: Not sure how many or what im guessing 2 x 120mm.

Now for the second stage I am going to buy the same GPU and go with a CrossFire configuration. I will add another set of the same RAM aswell but the big ticket that splits this stage and my big concern is I would like to run 3-4 monitors and am unsure if the GPUs are enough. I idealy want 4 monitors with 3 for the game on the 2 GPUs and an extra for browsing/chat/etc on the integrated chip. I am comfortable with the main display being 1920x1080 if it can run at that. Also one last thing, does anyone know were to find those trio monitor setups with the wide screen center and 2 tall sides? Couldn't find any >.<
