How much storage would I need on my new SSD?

Current HDD I use is WD Cavair Green 1TB HDD.

I've been using this since I think 2008 so about 5 years, and I only used 215 GB of space.

If I'm going to be upgrading my HDD to SSD, how much storage or size would I need on the SSD?

I'm planning to only run 1 SSD.

What I had in mind is the SAMSUNG 840 Pro Series 512GB SATA III (SSD)http://www.newegg.com/Product/Product.aspx?Item=9SIA0AJ...

For backup external HDD, how much space is necessary? Is going for 500GB too much for backup?

FYI all other hardware will be upgraded as well so compatibility will not be an issue.

Update:
The first consideration for the SSD on the top is at $500.

This one is currently going for $340 and has barely any difference with the SAMSUNG 840 as far as I know.

The SSD is best used to hold the operating system, applications and games. All other media files/documents are better off on another drive.

That being said, try to see how much your documents and media files take up on your current install and subtract it from the total used space to get an idea of how much space you need. I find I have more than enough space with just a 128GB SSD but this is because I've managed the files pretty well and regularly uninstall unused applications and games.

The Samsung 840 Pro beats the Evo in performance but this difference is not that noticeable in everyday use. Additionally the Pro uses MLC rather than TLC and would therefore have a longer lifespan than the Evo.
