Sapphire Radeon Vapor-X HD 7950 vs EVGA GeForce GTX760 SuperClocked

I would be gaming on three monitors I want to know which card would be better.

Going by the base model of each in this comparison, they appear to be pretty evenly matched or trade blows depending on the game. 3 monitor gaming on either card will be a struggle, however. With 3 x 1080p displays, the card will have to render at 5760 x 1080 resolution.

I would get the 7950. Approximately the same performance, but the 7950 is much cheaper.

Considering the similar performance of the two, the tie-breaker is the price. The 7950 I listed earlier is $170, whereas the cheapest 760 that I'd recommend is $250 (http://www.superbiiz.com/detail.php?name=MSI-760TFC&c=CJ MSI Twin Frozr). For a difference of $80 you could get an extra 8GB of RAM, buy a game or two, save the money for a CPU upgrade, SSD upgrade, or other viable options.

If you can afford the GTX 760, I would just step up to another level and get the PowerColor Radeon HD 7970 for the same price as a 760 after rebate.

That's actually very smart. The 7970 is oodles better than the 760 so for the same price it's a much better option.
