Question about multiple GPUs and Monitors

I am very new to the concept of SLI/Crossfire an using multiple graphics cards. I have built a setup once before for someone who requested a 2 card SLI setup, which was easy enough but I know very little about its limitations and how it functions.

My question is this: I currently have a Zotac GTX 560 with which I run 2 1920x1080 monitors off of. I primarily do gaming, however I obviously don't run the game on two monitors at once. I just put in an order for a Zotac AMP! GTX 760 and am wondering if it would be possible to have both cards installed(given there is enough space) at the same time, and have my old card control my monitor I use exclusively for music programs/communications programs, and have my new GTX 760 control my main monitor which my game would be rendered on.

I have absolutely no idea if this is possible, and if so how it would work. If this IS possible, would it help performance at all to have it set up like this in game? Any help would be appreciated, I looked around online and couldn't find any definitive answers.
