Upgade from Windows platform to Apple, Any suggestions.

Hi,

I have been on the edge of purchasing an Apple Product to delegate my home office responsibilities to. I do not have any formal apple experience. I was looking at the really nice (and extremely small) Apple Mac Mini with a dual core I-5 processor. (or maybe I7)

I am now using an old HP XW8400 workstation to do my work. But it needs a little sprucing up, ie hard drives, usb 3.0, of course I would like a faster processor too but i think i am maxed out. So far this thing just keeps plugging away. Its great, has plenty of storage, i can add HDD's at a moments notice. Has 2 dual core 5150 processors (not really all that fast) but just seem to keep on working flawlessly.

I am worried about using such a small computer (The Apple Mac Mini) to do daily dvd tasks such as converting video from dvd to .avi or .mpg formats. I have been known to run my workstation all day on the weekends to recode my video. (I would like to convert all my dvd's to .avi or .mpg files for storage on a hard disk. I notice that my 4 processor cores are pretty much maxed out at 75% when working the amerisoft dvd program to recode my videdo to .mpg's

Also I am not too keen on using the new apple product for handling my .mp3 music just because I hear you are required to use the apple itunes for just about everything. I do not wish to convert my library over in this manner. I just want to keep it simple and play my .mp3's as i usually do. I do not currently purchase any more music but do like to listen to my oldies. (Yes i am that old, crud!)

Any thoughts on my above concerns?
I may just be a little biased because equipment I am now using works without many issues. (But of course it is an old system,like me!)
Am i just being one minded here about the apple product.

Oh By the way,

My other thought was to purchase a small form factor workstation maybe a Dell T1700 or the like. I hear they are fairly available and probably priced about the same price as the Mac Mini I am thinking about.

Well I don't think you are being one minded. If you don't like the size, and you don't like the software, why WOULD you it?

Well, mainly I just want something that would work. A bit smaller is absolutely preferable. Of course it does not have to be that small like the Mac, but you know as with most others, I am trying to stay within a budget here. Maybe around $700.
