Which build would be better

Hi I am currently in the process of figuring out what CPU and Graphics card would be best for what I am trying to do. The majority of the work I plan to do is animation (various suites focusing on 3D rendering) and programming, I also plan to do my fair share of gaming with emulators and games like Watchdogs, Dark Souls 2, Dishonored, AC Series, and others. I want it to also be able to play bluray as well. I also plan to Overclock and water cool the entire set up, as well as maybe SLI or CrossFire, farther down the road. I personally favor the computer case I have, but am open to others with similar price tags and specs. I am planning to run this in a dual monitor setup. My budget is max $1600 but going over by ~$30-$40 is fine.
