Multiple Monitors + Multiple GPUs (AMD)

If money is no issue, what GPU & motherboard would be ideal in a triple monitor gaming setup at 1920x1200? Is it worth getting more than 2 cards?

Edit - The game I have in mind isn't released yet but it's supposed to be very demanding on PCs - Star Citizen. I'd also be upgrading the entire PC, so CPU (and most everything) is on the table too.

Also I forgot to mention, I'm looking for AMD only (got to keep cryptocurrency mining options open too :p ).

I would say that a good 7950 or 280x would be sufficient. Motherboard doesn't really matter, if you gave me your cpu info I could possibly pick a good mono. Regarding the 2 card question, it doesn't really matter if it's 2 cards or 1 if the card is able to support it.
 
What is worth it to you will be different to someone else. Also some games will be fine, some will be overkill and some bordering on tight. Also some want to always plat at max settings, others don't mind turning it down for a game or 2. Look at he numbers and decide.

Metro 2033 - 5760x1080 - Very High:

19 fps w/ 1 card
36 fps w/ 2 cards
49 fps w/ 3 cards

Crysis 3 - 5760x1080 - Very High 4x AA
17 fps w/ 1 card
28 fps w/ 1 cards
43 fps w/ 1 cards

Motherboard does in fact matter as Haswell boards generally supports only 2 GFX cards.

Also matters whether you overclocking the cards and how far. Outta the box, the 290x builds I have been involved with were faster more often than not.... but been getting 25% OC's on the 780s and only getting like 12% had them switching places.
