Which Graphics Card or SLI is the best for 1080p gaming?

I am building a new gaming pc and i want to play at 1080p on high/ultra. I have a 144hz monitor and i don't know which graphics card would get me the best FPS. Should i just get one gtx 780 and play at 60hz or get 760 sli and get more fps. I don't want to use v sync and limit my graphics card performance. My full build is http://pcpartpicker.com/p/wWybCJ . I don't want to play at 1440p or get a g sync kit either. I want to be able to play GTA V when it comes out. Thank you

if i get 780 i probably wont be able to SLI for a while since im really over my original budget. Would one 780 be enough for a 144hz monitor or would i get input lag or screen tearing?

No with a single 780 you would be fine. It's just that it won't take advantage of your screens 144Hz refresh rate since it should have fps around 60 on most games.

If you don't plan to sli the 780 down the road, then yes a 60Hz monitor will do.
