I've been doing it out of habit for over 10 years, but I've never actually looked into buying a gaming desktop outright. I always hear people say that it's no longer worth it to build your own. Is there any truth to that? Is building your own still significantly less expensive and more powerful?

Yes, in most scenario's.

and by making one yourself you get to choose the parts, for example of you're gaming you don't need that latest i7 and save money by doing that

it's also really easy, pc parts these days will just slide in. it's like putting lego's together. doing something that will harm your pc is not that likely if you use common snense (e.g don't put your cpu in with a hammer)

Most parts you order come with a warranty so that's not a problem either

for choosing your parts just do a bit of research and post it here, that way the chance of picking wrong or incompatible parts is really low.

for putting it together, just watch a couple of youtube tutorials and you'll have a good time building your own pc.

Yea the 2 biggest reasons are price and shipping. Boutiques will usually charge an extra $300-$500 over the cost of parts to build it for you. And they take like 3 weeks to ship it to you.

If you buy all the parts off most websites they ship right away and your build is usually a little cheaper as well.

The only way I would recommend buying a prebuilt gaming computer is if you have absolutely no idea how to put a computer together or don't want to learn.
