To put it simple yes it will bottleneck. It's safe to say that you won't be getting the most out of the card when twinned with that CPU.
That being said in most systems there are bottlenecks somewhere (which is one of the biggest flaws with the x86 architecture) and people can still play games fine with them. So if I were you I would get a cheaper card e.g. 760 and still get similar performance whilst saving you £200!

It will definitely be a bottleneck, but it also depends on the game, however If you OC your CPU to 4.2GHz(with a good air cooler) you will be fine.

Getting a new GPU will give you a more noticeable performance boost in games but if you want to take up full on PC gaming I would recommend getting a new Motherboard and CPU then GPU as it will be more future proof. The 780 is a very strong card and once twinned with a current (or next) gen i5 it will be a beast of a machine!

Since you already have a good cpu cooler I will say OC your CPU to at least 4GHz and that will be enough for a 780. (for example your cpu at 4.2GHz is roughly the same speed as i5-4690 at stock speed)
Don't be afraid to OC it is not hard at all, and if you have questions how to OC there are plenty of people on this forum that are willing to help

On a single card, the 760 cant take advantage of the extra vram, but if you SLI with another 4gb 760 it can work well.
The reason the 780 is better is because the GPU is more powerful, the amount of memory is not what determines the performance.
