Thinking about a i7-5820k build

I have a i7 920 with a GTX 580 and I am debating on doing a new build now or later. My part list so far:

CPU: i7-5820k (Amazon- $394.99)
motherboard: MSI X99S SLI Plus (Newegg $228.79)
Ram: AVEXIR Platinum Series 16GB Kit DDR4 2400 (Newegg $218.99)
GPU: HIS iPower IceQ X² OC H290QMC4GD Radeon R9 290 (Newegg $379.99)
Power Supply: RAIDMAX RX-850AE 850W (Newegg $109.99)
CPU cooler: Corsair hydro H100i (Newegg $99.99)

I have no idea what I want to do with a case yet due to the chosen CPU cooler as I have only done air cooling before. But I worry about how hot a 6 core with a 140w limit could get so maybe water might be better?

As for the SSD/HDD, I have that taken care of for now. I am on the fence on doing this build right now because DDR4 seems costly still and my GPU isn't that out of date.

I thought an 850w might be overkill, but I think the min system power for the AMD GPU was 750w and I don't want to blow a PSU again going with the min system wattage.

As for main use, this is a gaming build with one 1080p screen though I have been thinking about getting a 2nd one or maybe going 4k with it at some point. My i7-920 runs at stock 2.67ghz because it runs hot and well at this point it's almost 6 years old.

It might be better to wait for windows 9, broadwell and the next AMD GPU. (I feel like the green team is overpriced.)
On the other hand, the i75820k seems cool and I have been eyeing the R9 290 for some time. So I am on the fence for now, mostly because it seems like things have really slowed down in the past 5 years and PC gaming isn't anything like it used to be. The shooters/always online/DRM crap like steam have taken over.

Change the processor to an I5 unless you'll be doing heavy multitasking. Put the saved money onto a better gpu (780 ti), or just keep it. I'm not too sure about the new processors, os, and graphics card though.

I also tend to run VM's and wanted more real cores to give to the VM's. The GTX 780 ti doesn't really seem worth the money, I would take two R9 290's over spending 600-700 on one of those. Or get a R9 290x and pocket the savings.

If I plan to overclock, should I really go for water/liquid cooling or should a good CPU fan be able to do it?
